Whole meal Pancakes

  • 1 cup wholemeal flour
  •  1/2 teaspoon of baking powder
  • 1 egg
  • 200ml low fat milk
  • Tiny pinch salt
  • 2 tablespoons of sugar
    1. Sift together flour, baking powder, sugar, and salt
    2. In another bowl, whisk together the egg and milk; add to flour mixture, stirring only until smooth. (If the batter seems too thick add a little more milk or if too runny add more flour)
    3. Cook on a hot, greased pan. Cook until bubbly and somewhat dry around the edges, and lightly browned on the bottom; turn and brown the other side.

    Corn and Carrot Fritters!

    1 1/2 cups self raising flour
    1 can whole corn kernals
    1 carrot
    2 Eggs
    1 Cup Low fat milk
    Salt and Pepper to taste

    In a bowl, mix 1 ½ cups self-raising flour, 1 can whole-kernel corn (drained), 1 carrot (grated).

    In another bowl, mix 2 eggs and 1 cup low-fat milk.  

    Add egg mixture to flour mixture.

    Gently stir until mixed.

    Heat a non-stick fry pan over a medium heat.

    Spray with a little oil.

    Spoon mixture into pan to form fritters

    Cook fritters until golden brown on both sides.
